Ingredients for Jamie Oliver's Good Old Bread & Butter Pudding:For flavour butter:
- 100 g unsalted butter, softened
- A large pinch of ground nutmeg
- A large pinch of ground cinnamon
- Zest of 1 large orange
- 8 x 1cm slices of good-quality bread
- 9 large free-range or organic eggs
- 140g castor sugar
- 500ml semi-skinned milk
- 565ml single cream
- 1 vanilla pod, scored lengthways and seeds removed
- 4 tablespoons good-quality fine-cut marmalade.
Now that's sorted, its time to get to work.
- The first thing you need to do is preheat the oven to 180C, 350F, or gas mark 4, depending on your oven.
- Next, it's time to make your flavoured butter by mixing the butter with the nutmeg, cinnamon, and orange zest. Use a little bit of the butter to also grease a medium-sized shallow, overproof dish.
- Take the flavoured butter and butter the bread, cut each slice in half diagonally, and then pop the slices in your buttered dish.
- Now separate the eggs, reserving all nine yolks but just one egg white. Whisk the egg yolks and the egg white with sugar, and then gently heat the milk and cream in a saucepan with the vanilla seeds and pod. Pour into the eggs, making sure to stir all the time. Remove the vanilla pod then pour the mixture over the bread, leaving it to soak for at least 20 minutes.
- Put the dish in a roasting tray and pour in enough boiling water so that it reaches halfway up the side of the dish, pop it into the preheated oven for around 45 minutes, or until the custard has set.
- Now it's time for the special ingredient. Gently warm up the marmalade in a saucepan, remove the dish from the oven, and brush the marmalade on top of the bread. Then put the dish back into the oven for an additional five to 10 minutes. Once it's ready, allow it to cool and firm up slightly before serving and enjoying.
